Asian-Inspired Quinoa Crunch Salad


Per Serving (¼ recipe)

Ingredients


Salad

  • 2 cups cooked, shredded chicken breast

  • 1 cup shelled edamame

  • 1 cup cooked quinoa (cooked with chicken bone broth)

  • 1 medium cucumber, chopped

  • ½ bag coleslaw mix (about 2 cups)

  • 3 green onions, sliced

  • ¼ cup peanuts

Dressing

  • ¼ cup soy sauce

  • Juice of 1 lime

  • ¼ cup chili sauce (sweet chili-style)

  • 3 tbsp rice vinegar

  • 2 tbsp honey


Instructions


  1. In a large bowl, combine chicken, edamame, quinoa, cucumber, coleslaw mix, and green onions.

  2. In a small bowl, whisk together all dressing ingredients.

  3. Pour dressing over salad and toss well.

  4. Chill 20–30 minutes for best flavor, then serve.

  5. Store in tupperware for lunch on the go. Top with peanuts before you head to work :)
