Ingredients

For the Chicken Pot Pie Soup

  • 2 lbs boneless, skinless chicken breasts

  • 4 cups chicken bone broth, plus more as needed for desired consistency

  • 2 tsp Better Than Bouillon Roasted Chicken Base

  • 16 oz frozen peas and carrots

  • 1 cup frozen green beans

  • 1 medium yellow onion, diced

  • 1 can (15 oz) cannellini beans, drained and rinsed

  • 1 cup 2% cottage cheese

  • 2 tbsp apple cider vinegar

  • 1 tsp poultry seasoning

  • 1 tsp garlic powder, or to taste

  • Salt and black pepper, to taste

For the Crispy Phyllo Crust

  • 6-8 sheets phyllo dough

  • Butter-flavored cooking spray

  • Garlic salt, to taste

  • Poultry seasoning, to taste

Instructions

  1. Cook the chicken. Add chicken, broth, Better Than Bouillon, onion, poultry seasoning, garlic powder, salt, and pepper to the slow cooker. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until tender and cooked to 165°F.

  2. Preheat the oven and add vegetables. Preheat oven to 375°F. Shred the chicken and return it to the slow cooker. Stir in frozen peas, carrots, and green beans. Cover and cook on HIGH for another 30–60 minutes, until vegetables are tender.

  3. Make the creamy base. Blend cannellini beans, cottage cheese, and a little broth from the slow cooker until smooth. Stir into the soup with the apple cider vinegar. Add more broth if needed and adjust seasonings.

  4. Prepare the phyllo. Arrange phyllo sheets on parchment-lined baking sheets. Make sure to lightly coat every 2 layers with butter-flavored cooking spray and sprinkle with garlic salt and poultry seasoning. Do 6-8 layers.

  5. Bake and serve. During the final 20 minutes of soup cooking, bake phyllo for 8–12 minutes, until golden and crisp. Watch closely to prevent burning. Divide soup among 6 bowls and top each with one sheet of crispy phyllo just before serving.

Storage and Meal Prep Tips

Refrigerator: Store leftover soup in an airtight container in the refrigerator for up to 3–4 days. Keep the phyllo crust separate so it stays crispy.

Freezer: The soup can be frozen without the phyllo topping for up to 2–3 months for best quality. Allow it to cool before transferring to freezer-safe containers. The creamy base may separate slightly after thawing, but gentle reheating and stirring can help restore the texture.

Reheating: Reheat soup gently on the stovetop over medium-low heat or in the microwave until steaming hot throughout (165°F for leftovers). Add a splash of chicken broth if the soup thickens in the refrigerator.

Phyllo Storage: Store baked phyllo separately in an airtight container once completely cooled. For the best crunch, make it fresh or crisp it briefly in the air fryer (2-3 min) before serving.

My Tips for Making This Recipe Even Easier

1. Use frozen vegetables. No peeling, chopping, or extra prep needed. Frozen peas, carrots, and green beans work perfectly in this recipe.

2. Don't skip blending the beans. Cannellini beans are mild in flavor and create an incredibly creamy texture while adding extra fiber. Your family won't even know they're in there!

3. Make the soup ahead of time. This is one of those meals that tastes just as delicious the next day. Prep the soup in advance and bake the phyllo right before dinner.

4. Adjust the broth to your liking. I like this soup thick and creamy, almost like the filling of a traditional chicken pot pie. If you prefer a thinner soup, just add more chicken bone broth.

5. Keep the phyllo separate. That crispy, buttery topping is what makes this recipe feel like a real chicken pot pie. Add it right before serving so it doesn't get soggy.
