BAHN MI CHICKEN SALAD
Makes 2 servings:
Per servings (1.25 cups):
Calories: 240 kcalProtein: 48 gCarbs: 3 g (Fiber 0.5 g)Fat: 5 g
INGREDIENTS:
2 cups chicken, chopped or shredded (rotisserie)
½ cup 2% Greek yogurt, (I love @fage)
½ cup Asian pickled veggies (carrots, daikon, cucumbers, jalapeno, green onion), chopped - I recommend Cleveland Kitchen Brand but there are options at most groceries in pickle section
2 tbsp juice from pickled veggies
½ lime, juiced
Salt/Pepper
½ tsp red pepper flakes (more or less depending on spice preference)
¼ shallot, minced
1 tbsp cilantro, chopped
DIRECTIONS:
1. In a large bowl, combine all ingredients until well combined. Use a fork to blend yogurt into chicken. Taste and add more seasoning as needed.
2. Top with more cilantro and pickled veggies. Serve in a wrap, on a crusty baguette with sriracha, or however your heart desires.
