Cook time: 35–45 minutes
Estimated nutrition per piece
About 200 calories | 25g protein | 4g carbs | 10g fat | less than 1g fiber
These estimates assume 93% lean ground chicken and typical reduced-fat shredded cheddar. Ground chicken leanness and cheese brands can change the totals. The bake is low in fiber, so pair it with fruit or whole-grain toast if you want a more filling breakfast.
Ingredients
10 oz liquid egg whites
6 medium eggs
1 cup Good Culture 2% cottage cheese
2 tbsp sugar-free buffalo sauce
1 tbsp ranch seasoning
Salt and pepper, to taste
1 lb lean ground chicken
½ cup chopped carrots and celery
¼ cup diced red onion
½ cup shredded reduced-fat cheddar cheese
Directions
Preheat the oven to 375°F. Lightly grease a 9 × 13-inch baking dish.
Cook the ground chicken in a skillet over medium heat, breaking it into small pieces. When it’s nearly cooked through, add the carrots, celery, and red onion. Cook for another 4–5 minutes, until the vegetables soften and the chicken is fully cooked. Drain any excess liquid.
Whisk or blend the egg whites, eggs, cottage cheese, buffalo sauce, ranch seasoning, salt, and pepper until combined. Blending gives the bake a smoother texture, but whisking works too.
Spread the chicken and vegetables evenly in the baking dish. Pour the egg mixture over the top, then sprinkle with cheddar.
Bake for 35–45 minutes, until the center is set. Let it rest for 10 minutes before cutting into 8 pieces.
Storage and serving tips
Store cooled slices in an airtight container in the refrigerator for up to 5 days. Reheat a slice in the microwave until hot. You can also freeze individual slices for up to 2 months; thaw overnight in the fridge before reheating.
Want over 30g protein at breakfast?
Serve one slice with ½ cup Good Culture 2% cottage cheese on the side. That adds about 14g protein, bringing breakfast to approximately 39g protein.
For a change, add a side of Greek yogurt & berries instead. And if you’re a buffalo sauce person, give your slice another drizzle right before eating.
