High-Protein Crispy Rice Teriyaki Chicken Salad

This crispy rice teriyaki chicken salad is the perfect high-protein lunch. Made with crunchy cabbage, fresh herbs, juicy teriyaki chicken, and crispy sesame rice, this macro-friendly Asian chicken salad is easy to prep and packed with flavor.

Ingredients
Teriyaki Chicken
1–1.5 lbs chicken (breast or thighs)
¼ cup Primal Kitchen Teriyaki Sauce
1 tbsp garlic, minced
1 tsp fresh ginger, minced
Salt and pepper
Pinch red chili flakes
Salad Base
1 red bell pepper, finely chopped
2 cups coleslaw mix
½ cup shredded carrots
3 scallions, finely chopped
2 tbsp fresh cilantro, chopped
Crispy Rice
⅓ cup cooked day-old rice
1 tsp sesame oil
1 tsp teriyaki sauce
Dressing
3 tbsp coconut aminos
1 tbsp oyster sauce
½ tsp fish sauce
1 tsp rice vinegar
1 tsp sesame oil
1 tsp honey
Or you could use the Primal Teriyaki Marinade to really make it easy- add 1 tbsp coconut aminos to brighten.
Instructions
1. Marinate the Chicken
In a bowl combine:
Teriyaki sauce
Garlic
Ginger
Salt, pepper, and chili flakes
Add chicken and toss to coat. Marinate at least 1 hour. (or skip this step and step #2 and just add rotisserie chicken to your salad!)
2. Bake the Chicken
Preheat oven to 375°F.
Place chicken on a baking sheet and bake for 18–22 minutes, or until internal temp reaches 165°F.
Let rest, then chop into bite-size pieces.
3. Make the Crispy Rice
Heat a skillet over medium heat.
Add:
Day-old rice
Sesame oil
Teriyaki sauce
Spread into a thin layer and cook 5–8 minutes until crispy and golden.
4. Assemble the Salad
In a large bowl combine:
Bell pepper
Coleslaw mix
Carrots
Scallions
Cilantro
Add chopped chicken and crispy rice.
5. Dress the Salad
Whisk together dressing ingredients.
Pour over salad and toss well to combine.
Serve immediately or store for meal prep (just know the rice won't stay as crispy but flavors will be so good!)
Optional: add peanuts for extra crunch
