Ingredients


  • 2 cups shredded chicken breast (cooked)

  • ½ cup black beans, drained and rinsed

  • ½ red/yellow/green bell pepper, diced

  • ¼ cup green onions, chopped

  • ¼ cup corn

  • ½ cup plain Greek yogurt (2%)

  • 4 tbsp enchilada sauce

  • Juice of 1 lime

  • ½ tsp cumin

  • ½ tsp chili powder

  • Salt + pepper to taste

  • Cilantro for topping



Directions


  1. Add the shredded chicken, black beans, bell pepper, green onions, and corn to a large mixing bowl.

  2. Add Greek yogurt, enchilada sauce, lime juice, cumin, chili powder, salt, and pepper.

  3. Using a fork, mix everything together, pressing the chicken into the sides of the bowl as you go to really incorporate the sauce.

  4. Adjust seasonings and chopped cilantro to taste and divide into 4 servings.
