Ingredients
2 cups shredded chicken breast (cooked)
½ cup black beans, drained and rinsed
½ red/yellow/green bell pepper, diced
¼ cup green onions, chopped
¼ cup corn
½ cup plain Greek yogurt (2%)
4 tbsp enchilada sauce
Juice of 1 lime
½ tsp cumin
½ tsp chili powder
Salt + pepper to taste
Cilantro for topping
Directions
Add the shredded chicken, black beans, bell pepper, green onions, and corn to a large mixing bowl.
Add Greek yogurt, enchilada sauce, lime juice, cumin, chili powder, salt, and pepper.
Using a fork, mix everything together, pressing the chicken into the sides of the bowl as you go to really incorporate the sauce.
Adjust seasonings and chopped cilantro to taste and divide into 4 servings.
