Honey Mustard Chicken Thighs

Do NOT miss out on chicken thighs! They are so much juicier and they are really hard to mess up!
Macros Per Chicken Thigh:
Calories: ~190 kcal
Protein: ~30g
Carbs: ~5g
Fat: ~5g
Fiber: ~0.4g
INGREDIENTS:
8 chicken thighs, skinless with fat trimmed (or enough for you and family for multiple meals!)
3 tbsp Dijon mustard
1 tbsp honey
1 tsp olive oil
4 garlic cloves, chopped
½ shallot, minced
1 tsp thyme, dried
1 tsp rosemary, dried
Salt and Pepper
1 lemon, juiced
DIRECTIONS:
1. In a ziplock bag, combine all ingredients minus chicken thighs. Add chicken thighs and massage marinade well into skin. Store in fridge for 20 min- overnight.
2. Preheat oven to 400. Line sheet pan with parchment paper. Lay down chicken thighs (HOT TIP: add all your veggies here too if you want and toss them in marinade!) and bake for 25-30 min until internal temp reads 165!
3. Enjoy with a side of garlic roasted potatoes and vegetables.

🥗 1. HONEY MUSTARD CHICKEN POWER BOWL

Ingredients
1 honey mustard chicken thigh
½ cup cooked quinoa (cook in bone broth for added protein!)
1 cup roasted broccoli
½ cup shredded carrots
¼ avocado
1 tbsp light vinaigrette or Greek yogurt dressing (combine nonfat greek yogurt with dijon, lemon juice, and spices)
Directions
Slice chicken thigh
Build bowl with quinoa + veggies
Add chicken on top
Drizzle dressing
Toss or eat layered

Ingredients
1 honey mustard chicken thigh
1 Joseph’s lavash or high-fiber wrap
½ cup shredded cabbage or slaw mix
2 tbsp Greek yogurt (as sauce)
1 tsp Dijon mustard
Pickles or cucumbers
Optional: sprinkle of feta
Directions
Slice chicken thin
Mix Greek yogurt + Dijon for sauce
Toast wrap on skillet using olive oil spray...both sides.
Layer wrap with slaw, chicken, toppings
Drizzle sauce
Roll tightly and slice

Ingredients
1 honey mustard chicken thigh
1 medium sweet potato
1 cup steamed broccoli (or veggie of choice)
2 tbsp Greek yogurt
1 tsp Dijon mustard
Salt + pepper
Directions
Bake sweet potato at 400°F for 40–45 minutes
Slice open and fluff inside
Chop chicken and add on top
Add broccoli
Mix yogurt + Dijon and drizzle
Season and serve
