This Hot honey chicken salad is a high-protein, high-fiber twist on a classic. With bold spice, dill pickle flavor, and a creamy yogurt-based dressing, it’s the perfect low-fat lunch that actually satisfies. Top of a piece of toast, serve with crackers, or enjoy by itself!!



Ingredients


  • 3 cups shredded hot honey chicken, cooled and chopped

  • 1 cup white beans, drained

  • ½ cup celery, chopped

  • ½ cup shredded carrots

  • 2 large dill pickles, chopped

  • ¼ cup white onion, diced

  • 2 tbsp fresh dill


Dressing:

  • ½ cup 2% Greek yogurt

  • 1 tbsp Dijon mustard

  • 2 tbsp pickle juice

  • 2 tbsp hot honey

  • Smoked paprika, cayenne, salt, pepper



Directions


  1. In a large bowl, combine chicken, beans, and chopped vegetables.

  2. In a separate bowl, mix dressing ingredients.

  3. Pour dressing over chicken mixture and mash with a fork until well combined. The more you press the beans and chicken on sides, the better the texture IMO.

  4. Chill for 30–60 minutes before serving.

  5. Top with more paprika and hot honey when eating!
