Mini Frozen High-Protein Key Lime Pie Bites

These Mini Frozen High-Protein Key Lime Pie Bites are creamy, tangy, refreshing, and surprisingly filling thanks to the cottage cheese, Greek yogurt, and protein powder. Ingredients


Crust

  • 4 graham cracker sheets, crushed into crumbs

  • ⅓ cup Catalina Crunch Cinnamon Toast cereal, crushed

  • 2 tablespoons melted butter


Filling


  • 1 cup 2% cottage cheese

  • 1 cup plain Greek yogurt

  • 1 package (1 oz) sugar-free cheesecake pudding mix

  • 1 scoop vanilla protein powder

  • 2 tbsp honey 

  • ¼ cup fresh lime juice (about 2 limes)

  • Zest of 2 limes

  • 1 teaspoon vanilla extract

  • Pinch of salt



Directions


  1. Line a 24-count mini muffin pan with mini cupcake liners or just spray the muffin tins with nonstick spray.

  2. In a small bowl, combine the crushed graham crackers, crushed Catalina Crunch cereal, and melted butter. Mix until the crumbs are evenly coated.

  3. Add about 1 teaspoon of crust mixture to the bottom of each liner and gently press down.

  4. Add the cottage cheese to a blender or food processor and blend until completely smooth.

  5. Add the Greek yogurt, cheesecake pudding mix, protein powder, lime juice, lime zest, vanilla extract, and salt. Blend again until smooth and creamy.

  6. Spoon or pipe the filling evenly over the crusts.

  7. Sprinkle with additional lime zest if desired.

  8. Freeze for at least 3–4 hours, or until firm.

  9. Let sit at room temperature for about 5 minutes before serving for the perfect creamy texture.

Storage Tips
