This peanut butter chocolate chia pudding is a high-fiber, protein-packed snack that feels like dessert. It’s rich, satisfying, and perfect for curbing cravings while staying on track.
Ingredients
1.25 cups low-fat coconut milk
6 tbsp chia seeds
2 scoops chocolate protein powder
3 tbsp PB2 powder
3 tbsp Lily’s dark chocolate chips
3 tsp monkfruit sweetener
2 tsp vanilla extract
Directions
Whisk all ingredients together in a bowl or a small blender.
Let sit for 5 minutes, then stir/blend again.
Refrigerate for at least 2–4 hours or overnight.
Stir before serving.
Top with whip cream if your heart desires!
