This peanut butter chocolate chia pudding is a high-fiber, protein-packed snack that feels like dessert. It’s rich, satisfying, and perfect for curbing cravings while staying on track.


Ingredients


  • 1.25 cups low-fat coconut milk

  • 6 tbsp chia seeds

  • 2 scoops chocolate protein powder

  • 3 tbsp PB2 powder

  • 3 tbsp Lily’s dark chocolate chips

  • 3 tsp monkfruit sweetener

  • 2 tsp vanilla extract


Directions


  1. Whisk all ingredients together in a bowl or a small blender.

  2. Let sit for 5 minutes, then stir/blend again.

  3. Refrigerate for at least 2–4 hours or overnight.

  4. Stir before serving.

  5. Top with whip cream if your heart desires!
