Peppermint Mocha Overnight Chia Protein Oats

PEPPERMINT MOCHA OVERNIGHT CHIA OATS

 

MAKES 3 SERVINGS (I suggest for a snack!)

 Ingredients:


1-1.25 cups coconut milk (I used @malk)

2 scoops chocolate protein powder (I use @paleovalley chocolate bone broth DISCOUNT HERE)

2 tsp vanilla extract

2 tsp monk fruit sweetener (or sweetener of choice ie maple syrup)

6 tbsp chia seeds

1/4 tsp peppermint extract  


Toppings:

Whip cream, crumbled peppermint, crumbled chocolate cookies

 

Directions:


1. In a blender, combine all ingredients. Pulse until well combined. Let sit for 3-4 minutes. Pulse again. Depending on thickness (it should be starting to congeal) you may need to add more seeds or if too thick- add more milk. Divide into 3 storage containers, making sure to evenly distribute the chia seeds. Shake vigorously (or stir) before putting in fridge.


2. Store in fridge overnight. You may need to stir it or shake it if its separated while in fridge. Top with whipped cream, peppermints, and cookies (I love Trader Joe’s dark chocolate mint stars!) Good in fridge for up to one week.
