Greek Chicken Thighs (bulk protein)

GREEK MARINATED CHICKEN THIGHS:
Makes 6 servings:
Per serving: 1/6 of recipe, ~5.3 oz cooked chicken each
Calories: ~325 kcal
Protein: ~40 g
Carbs: ~2 g
Fat: ~17 g
INGREDIENTS:
2 lbs chicken thighs
1 lemon, zest and juice
1 tbsp olive oil
4-5 garlic cloves, minced
1 shallot, petite diced
½ tsp oregano, chopped (fresh or dried)
½ tsp paprika
Salt and Pepper
2 springs fresh parsley, chopped
DIRECTIONS:
1. In a ziplock bag, combine the zest of 1 lemon, lemon juice, olive oil, garlic, shallot, and spices.
2. Pat dry the chicken thighs. Toss in the bag and seal. Massage marinade into chicken thighs. Store in fridge for 1-2 hours.
3. Preheat oven to 400. Line baking sheet with parchment paper. Lay chicken thighs out. Bake for 20-25 minutes or until internal temperature reaches 165. Finish with fresh parsley.
