Caramel Apple Pretzel Protein Bark (with Date Caramel)

INGREDIENTS:
Date Caramel:
8 soft Medjool dates, pitted
2 tbsp unsweetened almond milk
1/2 tsp vanilla extract
½ tsp sea salt
Bark Base:
1 bag Lily’s no-sugar-added dark chocolate chips
1/2 tsp coconut oil
Toppings:
1 small green apple, finely chopped
6–8 pretzel thins, lightly crushed
Directions:
Make the Date Caramel
Soak the dates in HOT water for 10-15 minutes. Then, blend the dates, almond milk, vanilla, and salt until smooth.
Melt the Chocolate
Microwave the chocolate chips + coconut oil in 30-second intervals until smooth.
Assemble the Bark
Spread melted chocolate on parchment-lined tray.
Drop spoonfuls of date caramel and swirl with a knife.
Scatter the chopped apples and crushed pretzel thins on top.
Add some flaky sea salt!
Chill
Freeze for 30–45 minutes. Break into bark pieces. Store in fridge or freezer.
